Copper's classic kitchen bonafides come from the material's reaction with raw eggs -- basic chemistry with a culinary bonus.
When you whisk egg whites in a copper bowl, some of the copper ions detach from the bowl and bond with a protein in the egg whites called conalbumin. This forms a strong, stable conalbumin-copper complex that delays any tendency in the expanding egg foam to deflate.
Whisking mixes air with the egg, creating bubbles that expand the volume of the liquid up to eight times, as the egg protein uncoils and stretches. The more the protein stretches, the stiffer the beaten egg foam up to stiff, peaky points.

Copper bowl fits perfectly on my 7 Qt KitchenAid mixer! Copper is heavy duty and Not a thin & inexpensive gauge. Worth every penny!
I love the weight of it and it looks gorgeous. I do have a question. I have used the bowl four or five times. It gets washed and dried immediately. I noticed some dark specs forming and wondered if it was normal. (See picture)

Thank you so much for reaching out! I appreciate your questions and concerns regarding your Sertodo piece.
The copper will naturally patina inside and out, but there are ways to slow this process down. After washing with a soft sponge (anything abrasive will scratch at the polished surface), I recommend thoroughly drying the piece as opposed to letting it drip dry. The little droplets of water will cause a "spotting" look on the copper. This is not permanent! The copper only needs a little additional care. Occasionally, I’ll polish them up completely with Wright’s Copper Cream. Not organic, but it rinses completely away and the entire piece looks brand spanking new. This is actually what we use here at the office.
While we are unable to stop a patina from occurring, we want you to be happy. We have some videos on our website that will help answer additional questions on how to clean and maintain your copper. We would appreciate any opportunity to fix this for you.
