When you whisk egg whites in a copper bowl, some of the copper ions detach from the bowl and bond with a protein in the egg whites called conalbumin. This forms a strong, stable conalbumin-copper complex that delays any tendency in the expanding egg foam to deflate.

Why does copper change color?
Copper naturally develops a patina (darkened appearance) over time when exposed to air and moisture. This is normal and doesn't affect quality or health benefits. Many people love the aged look, while others prefer to polish it back to a shine, we think both are beautiful and authentic.
Is it safe to drink from copper vessels?
Yes! Copper has been used safely for drinking water for thousands of years in Ayurvedic tradition. Pure copper naturally has antimicrobial properties. However, avoid storing acidic beverages (citrus juices, vinegar) in copper for extended periods. Always rinse after use.
Can I put copper in the dishwasher?

Just got this in and loaded (very easily) into my KitchenAid 8990, which is the latest Commercial level 8 qt. Adore it and I haven’t even used it yet-but super excited! However, I watched your video on this page partway and got distracted…any chance y’all will also be offering a bowl with exact same measurements as the one I just received, but in 7 qt (looks in the picture to be slightly bigger) with the lip rolling out as your partner’s bowl does, and a pour spout?? I personally need many different sized bowls (I have two of the KitchenAid 8 qt and 2 of the 5 qt-and now I have a copper 6 qt, but no 7 qt) I watched you take that off of her mixer and turn it around, it looks like it has a lip that rolls outward all the way around the top, not rolling straight up like the 6 qt bowl that I just received -I would love that for the difficulty in pouring ingredients into the taller 7 and 8 qt bowls-not a problem with 5 and 6 qt but major with the bigger ones-and I also saw a POUR SPOUT on it. If you do I’m buying that as a second copper bowl-and I might even buy 2 of each just to have these beauties on hand-they are ABSOLUTELY THAT STUNNING!!! You guys do incredible work!!! Thank you!!!
