It's been two years and still believe this was my best investment. Today was Poulet à la moutarde. The chicken browned beatifully on medium, deglazed with white wine then simmered on low for 20 minutes.
I am in awe of this pan. The responsiveness and how it heats evenly with no hot spots are incredible. I broke it in with a puttanesca-type sauce and ended up using low the entire time. I can't express how happy I am with this cookware.
