    What Is The Point Of Copper Mixing Bowls?

    If you're wondering what is the point of using copper mixing bowls instead of stainless steel or other materials, you need to understand the science behind copper's reaction with egg whites. 

    Why should eggs be beaten with a copper mixing bowl?

    When you whisk egg whites in a mixing bowl, the whipping action of your whisk forces the clumped proteins in the egg whites to loosen up from each other.

    As you continue to whisk, air is incorporated into the mixture. The proteins then rearrange and cause air to be trapped within the egg white foam. The proteins in the egg whites are bonded in a type of network that can be ionic such as disulfide bonds that form between two sulfur groups on the egg white proteins.

    In short, as more of these ionic networks form and the proteins tighten up, water gets pushed out. As a result, you will end up with whipped egg whites that are essentially gritty and dry.

    What happens when you whisk eggs in a copper bowl?

    The magic happens when copper discourages strong disulfide bonds that can lead to gritty, dry whipped egg whites. Copper reacts with egg whites in a certain way that allows for the fluffiest results for heavenly meringues, waffles, macarons and all kinds of delicious goodness.

    Basically, when you whisk egg whites in copper mixing bowls, some of the copper ions detach from the bowl and bond with a protein in the egg whites coined as conalbumin.

    This forms a strong, stable conalbumin-copper complex that delays any tendency in the expanding egg foam to deflate.

    Whisking mixes air with the egg, therefore creating bubbles that expand the volume of the liquid up to 8 times, as the egg protein uncoils and stretches. In short, copper strengthens the protein in egg whites so that it is able to hold the moisture within the air bubbles more efficiently. This means that the hard peak of your egg whites will not collapse and dry out due to the conalbumin-copper complex.

    The more the protein stretches, the stiffer the beaten egg foam which results in stiff, peaky points that are perfect for making delicious meringues or macaron.
