I love the copper though it takes constant polishing to keep it shiny which I could live with given the nature of the metal. However, I have problem keeping the tin inside clean. I have used it for 2 weeks about 10 times to make home fries, eggs and 4"-5" strips of bacon for breakfast. I cook on a 8,500 BTU burner which is suitable for 8" of smaller pan/skillet but the cooking darkens the tin so much. I use dishwashing liquid, Bar Keepers Friend or even vinegar with baking powder to no avail.

I bought the small 8" pan and like it very much, and decided to buy the larger 10" pan. It works very nicely for omelettes and veggies, and meats create a nice fond that deglazes well. Clean up is very easy. If there's stuff that doesn't come off right away with a quick wipe, I just soak it in soapy water for a few minutes, and it wipes clean with very light pressure from a non-scratch pad.
The handle is ok for the small pan, but the heavier weight of the large pan can create pressure points on my hand. I have to hold it so that the heel of my hand is on top of the end of the handle, which takes pressure off my fingers. It's a bit annoying, and I'd prefer a normal handle, but it's not too bad and not a deal breaker. I'd also prefer a brushed finish instead of polished.

Great pan. I got the 8" for eggs, frying small amounts of veggies, etc. The workmanship is top notch. It's my first copper pan, and I was surprised at how non-stick the tin really is. I was never able to make an omelette in my old pans due to the egg sticking, but this worked beautifully. One omelette only a few tiny bits stuck, which cleaned up easily soaking in hot water for a few minutes, and other omelettes left no remnants at all. The responsiveness was nice for mushroom sauce, which left a bit of a film on the sides but cleaned up very easily.
I would deduct 1/2 a star for the handle and the high polish finish. The handle feels a bit weird when holding the pan, since it's three steel rods instead of a continuous surface like most pans, but when actually using the pan, it feels fine (I actually don't notice that I'm holding it when I cook). The handle doesn't get hot at all. The high polish finish is done very well, but a brushed finish (or peacock) would look nicer and be a bit more durable.

I love this pan. I can finally get rid of my only Teflon pan that I only used for eggs and omelets. I have used it for both and they glide out of the pan effortlessly. I have been collecting copper for years but this my first piece from them. I will return.

Tried my new little skillet today for the first time. Not only is it lovely, it cooks evenly and quickly. I melted a little butter in the pan while I whipped a couple eggs in my Sertodo copper mixing bowl and got them super fluffy before pouring into the pan. Beautiful fluffy soft and tender eggs in less than a minute. Wonderful skillet! I will use this everyday, thank you!

Artisan crafted old world beauty! Cooks great, perfect heat distribution, surprising non stick with light oil or butter. Just dont use scouring pads to clean it. The tin discolors a bit but its a pan for cooking not a trophy. Say no to stamped mass produced cookware by supporting these folks!

I was looking for a few 22nd anniversary ideas which is copper and ran across Sertodo. Not only did they welcome me into their warehouse to look at inventory (they are mostly an online store) they treated me as if I was family. Even offered me an oyster po'boy! this is the best pan, ever. Gorgeous in appearance, and the tin cooks fantastically. Non-stick naturally, heats and cooks fast on low-medium temp. I've cooked stir fried and pancakes. All great tasting. Easy clean up, hot soapy water.
